When reminders go out
Reminder and rebooking emails go out once a day, at the time you choose under Settings → Bookings & reminders → Send reminders at. The time is in your site’s own timezone (WordPress Settings → General → Timezone), and it stays at that time when the clocks change.
Before 2.756.0 the daily run was fixed to the moment the plugin was installed, counted in UTC, so it moved an hour every spring and autumn. If your reminders started arriving an hour early or late after the clocks changed, that was why, and updating fixes it on the next page load.
Make sure your site’s timezone is a city (for example London) rather than a fixed offset such as UTC+1. A fixed offset never changes for summer time, so the clocks would appear to change underneath it.

Why 9am by default?
Early enough that a reminder arrives before the day gets busy, late enough not to wake anybody. Choose any time you like.
Does this change the time shown in the email?
No. The appointment time in the email has always been your local time; this only decides when the email is sent.
My site does not get many visitors. Will reminders still go on time?
WordPress runs scheduled jobs when somebody visits the site. On a quiet site they can go a little late; a real server cron job makes them exact. See the WP-Cron help topic.
