Handling plans
Every salon has dogs that are fine for everything except nails, and one that will take your hand off if you touch its back end. That lives in one groomer’s head until the day they are off sick.

“Difficult” is useless. “Fine until the dryer, then needs two people” is a plan.
Not a behaviour assessment
This is “how do we get through a groom safely”, which is a practical question. Formal bite records belong to a trainer.

Should the owner see this?
Say it kindly and say it early. Owners generally know, and being told at pick-up that their dog needed muzzling is much worse than being told at booking.
